Delicious, aromatic, and melt in your mouth lamb shanks are perfect for warming the hearts of family, friends, first dates or factions. This recipe brings maximal winter comfort with minimal preparation and expense.


Slow Cooked Balsamic Lamb Shanks

Serves 4


  • 2 carrots, diced
  • 2 celery sticks, diced
  • 3 garlic cloves, sliced
  • 200g mushrooms, sliced
  • 2 bay leaves
  • 1 400g tin diced tomatoes
  • 500mL chicken stock
  • ½ cup balsamic vinegar
  • Salt and pepper to taste
  • 4 lamb shanks
  • 4 5cm sprig fresh rosemary
  • 4 5cm sprig fresh thyme



Add carrots, celery, garlic, mushrooms, bay, tomatoes, stock, vinegar and salt and pepper to slow cooker. Stir well to combine. Add lamb, rosemary and thyme to slow cooker, making sure the lamb is covered by the liquid.

Cook for 8-10 hours on low (or 5-6 hours on high).

Serve with mashed potato and steamed beans.
